RICE SALAD WITH FRENCH DRESSING:

Ingredients



Fine grained rice150 g

Celery4 sticks

Red Bell Pepper2 medium size

Gherkin12 pc

Sweet corn1 tin

Salted nuts100 g

Black olive12 pc

Pineapple225 g

Saltto taste

For Dressing:

Salad oil3 tbsp

Wine vinegar2 tbsp

Pineapple juice3 tbsp

Pepper and salt to taste

Method:

Clean the celery and cut into small pieces. Cut the bell peppers too. Take half of gherkin and cut into round pieces. Cut the rest of the gherkin into small pieces.



Take a large bowl and mix the rice and all other ingredients. Use a fork to mix the ingredients well. Take another bowl and mix all the ingredients required for the dressing. Now pour this dressing mixture over the salad and the rest of the gherkins. Mix well and serve.

CHICKEN AND SESAME SALAD:

Ingredients

Boiled chicken300g

Tomato250g

Sliced cucumber1

For Dressing:

Lemon juice1 tbsp

Salad oil2 tbsp

Soya sauce2 tbsp

Brown sugar1 tbsp

Roasted sesame seed2 tbsp

For Garnishing:

Egg omlette 1 pc

Method:

Mix all the ingredients required for dressing. Cut the chicken into medium pieces. Take a serving plate and place the dressing mixture at the center and cover it with chicken pieces. Decorate the serving plate with pieces of tomato, cucumber and the omlette.

VEGETABLE PASTA SALAD

Ingredients

Boiled pasta200g

Baby corn50g

Red & yellow bell pepper½ pc

Beans50g

Carrot1 pc

For Dressing:

Cooking oil2 tbsp

Vinegar1 tbsp

Mustard powder1/4th tsp

Salt and pepperto taste

Garlic paste½ tsp

Method:

Cut the beans, baby corns and carrot into square pieces. Take a bowl of salted hot water and immerse the vegetables for some time. Take out the vegetables and then throw the water away.

Take the bell pepper and de-seed it. After that cut pepper into small square pieces. In a small bowl mix the ingredients for the dressing. Now mix the boiled pasta and vegetable dressing and serve.The above – mentioned salad recipes are all healthy and can be had during lunch or dinner.
