Healthy Vegetable Pie Recipe

On a day when you feel lethargic to cook and want to make something quick and easy which is also wholesome and healthy  a vegetable pie is the perfect option. This entree is generally loved by everyone in the family and can be made in a jiffy. Moreover, you can make it nutritive by adding veggies of your choice and add herbs and flavors to suit your family’s palate. Here is a simple recipe for a vegetable pie that makes for healthy wholesome meal.

To make this vegetable pie, you can choose a medley of vegetables such as carrots, potatoes, French beans, cauliflower florets, broccoli, etc.

Roughly chop all the vegetables. Remember to chop all vegetables to more or less the same size to ensure they all get cooked evenly. You will require about 2-3 cups of chopped mixed vegetables for this recipe. Now, place the veggies in a steamer and steam them till they get cooked and are tender.

Once the veggies are cooked, take them in a mixing bowl and add the seasoning. For the seasoning, add salt, freshly ground black pepper, fresh parsley, little lemon juice and some paprika powder to the veggie mix. Mix the seasoning ingredients very well with the veggie mix.

To make the pie crust, in a mixing bowl combine 3 beaten eggs with 2 tablespoons low-fat milk, half a cup feta cheese with a pinch of salt and some dried thyme. Stir all the ingredients well.

To assemble this pie, spread some oil or butter on tart pan and lightly dust it with flour. Pour the crust batter at the bottom, followed by the vegetable mix. Finally top with remaining crust batter. You could also add some grated mozzarella or cheddar cheese at the top.



Bake in a pre-heated oven at 350-400 degree Fahrenheit for 20-25 minutes till the crust turns golden brown in color.

Let the pie cool for some time and before serving cut it into wedge-shaped portions. This pie tastes great as it is or you could serve it with a zesty tomato salsa consisting of freshly chopped tomatoes, fresh jalapenos, lime juice, cilantro, salt and paprika powder.
