How To Cook Beef Brisket

Beef brisket is a delicious food and is made from pieces of meat taken from the lower chest part of veal or beef. A classic beef brisket should be prepared by cooking the meat slowly with spices, white wine and vegetables.

The taste of the brisket you prepare depends to a great extent on the meat you choose and a good brisket meat should have good marbling of dark colored meat and fat. However the fat deposited should be trimmed off before cooking the meat. Cut the slices for beef brisket diagonally in the opposite direction of the grain of the meat.



Slices should not be thicker than quarter an inch and while cutting, ensure that slices are of uniform thickness. In order to a get a tender and tasty brisket, cook the meat in low temperature in moist heat as low temperature cooking also helps to avoid the shrinkage of meat.


How To Cook Beef Brisket
Preparation time- 20 minutes

Cooking time- three hours and 15 minutes

Total time- three hours and 35 minutes
Ingredients

Olive oil- one tablespoon

Beef brisket- two pounds

Grounded salt and pepper- to taste

Dry white wine- half cup

Diced onion- one medium sized onion

Minced garlic cloves- four

Coarsely chopped tomatoes- two

Peeled carrots- four

Peeled parsnips- four

Chicken or beef stock- half cup

Water- quarter cup

Dried thyme- one teaspoon

Dried rosemary- one teaspoon

Bay leaf- one Juniper berries- twelve


Directions to Make Beef Brisket

Set the oven at a low temperature of about 225 degrees F and preheat the oven. Add the oil to a pan and heat it over medium heat. Rub the beef brisket with grounded pepper and salt and cook both sides of the briskets in a pan at high temperature, till the exteriors of the brisket become brown. Keep the browned brisket aside.

Add wine to the heated pan with constant stirring using a wooden spatula. After this, add the diced onions to the pan and sauté over medium heat for about five minutes. Thereafter add the minced garlic cloves to the pan and cook for one more minute.



Now, add tomatoes, slices of parsnips, slices of carrots, thyme, bay leaf, rosemary, water and chicken or beef stock and juniper berries to the pan. Add the browned brisket to the pan and mix the entire ingredients well. Juniper berries provides a lot of flavor to the dish, hence make sure to include it in the ingredients list. Crush the berries before adding them to the pan.


Transfer the contents to an oven safe bowl or Dutch oven and cook it under cover for about two and a half to three hours or till the meat become tender. The temperature of the meat should attain about 145 degree F.

Discard the bay leaf and take out the brisket from the oven. Slice the brisket again and arrange them on the server plates with the parsnips and carrot slices. Also add the broth on each serving to get a good taste. The beef brisket will be enough to make four to six servings.
