How To Make A Delicious Potato Frittata

Potato Frittata is ideally a complete meal on its own.Hence it can be either served as a heavy breakfast or a late nigh supper.It is a healthy and nutricious dish which has all the nutrients and vitamins of vegetables (like potatoes, broccoli, tomatoes,onions )milk ,cheese and eggs.

Dried herbs like oregano, rosemary, thyme used in thie dish are rich sources of antioxidants.These antioxidants help to build strong immunity in the body and thus help the body to fight various diseases.

Serving: 2-3 people
Ingredients used for making potato frittata are

1 1/2 cups of potatoes cut into cube shape,2 cups of coarsely chopped broccoli florets ,1/2 cup of coarsely chopped onion ,1 teaspoon of oregano leaves ,1 teaspoon of finely crushed rosemary leaves, 1 teaspoon of thyme leaves , 1 tablespoon of olive oil ,3/4 teaspoon of sea salt ,1/4 teaspoon of grounded black pepper, 6 eggs,3 thinly sliced medium size plum tomatoes,1/4 cup grated cheese .


Preparation of potato frittata

Take some water in a medium size saucepan and bring it boil. Once the water reaches its boiling time, add the potatoes (cut into cube shapes) and cook them until they become tender. It will take approximately 7 minutes to cook and become soft. Once the potatoes are done, add the coarsely chopped florets of broccoli. Cook them for another 1-2 minutes. Now with the help of a strainer, strain them out and keep both the vegetables aside.

Put some oil in a medium size ovenproof skillet and heat it on a medium heat. Once hot, add the coarsely chopped onions into the skillet. Saute them until soft. Once these onions are cooked, add potatoes and broccoli. Stir all these vegetables together in a low- medium heat. Take a medium size mixing bowl and add oregano, rosemary, thyme, sea salt and pepper .Mix them gently .Now add the eggs and milk into the mixture. Blend them together with the help of a whisk such that no lumps are formed.

Now pour this mixture of egg, milk, thyme etc into the above contents of the skillet. Let the egg mixture poured into the skillet settle down. Without stirring them, cook them for 5 minutes. Once when the eggs are set on bottom of the skillet, place some sliced tomatoes on the top of the egg mixture. Sprinkle some grated cheese and remaining amount of teaspoon of sea salt (or as per taste) onto the tomato slices and egg mixture. Broil for another 4 to 5 minutes until eggs are set and cheese turns light brown.


Tip

Potato skin is rich in fiber and vitamins.So; one can use unpeeled potatoes (along with the skin) in this dish to avail its benefits. However, while using unpeeled potatoes, we should wash these potatoes thoroughly under running water to remove all the dirt from the skin.



Beside this, one should also soak these potatoes in water for few minutes. It helps to remove all the toxins present.Using unpeeled potatoes in this dish is optional and depends entirely on your taste preference. Broccoli can be replaced by cauliflower florets.
