Golden-fried crunchy, meaty spring rolls that are symbolic of prosperity always seem to be the perfect starters that reverberate in different layers of textures and flavours.


Golden-fried Crunchy, Meaty Spring Rolls
Serving: 10-12

Preparation Time: 15-20 minutes

Cooking Time: 10 minutes
Ingredients

Spring roll pastry or Chinese egg roll wrapper (one pack of 25-30 sheets)




For Filling

1 pound of Lean Grounded Meat of Choice (Beef, Chicken, Prawn, Turkey, Pork)

2 tablespoons of finely chopped garlic

1 teaspoon of sugar

2 tablespoons of soya sauce

1 tablespoon of fish sauce

1 tablespoon of sesame oil

Some freshly grounded pepper

Glass noodles (2 small packets)

1 cup of dried shredded cloud ear fungus (soaked in water for 10 minutes)

3 cups of shred carrots

3 cups of vegetable oil for frying


For the Dip

1/3 cup of vinegar

¼ cup of sugar

¼ cup of corn syrup

1 teaspoon of salt


Procedure

Begin by gently peeling off the pastry sheets one-by-one and case them in a damp cloth so that they retain their moisture. To prepare the filling, mix all its ingredients properly till a meat ball like consistency is achieved.

On every sheet add two heaped tablespoons of stuffing in a longish, lean manner and begin folding from one corner going diagonally and tightly (avoiding air bubbles) till you reach the middle of the sheet. You must then fold both the side ends inwards and continue folding athwart till the sheet’s end is reached and then dab on some egg white for sealing the end.




You can make the whole bunch in advance and place in a single layer inside freezer bags to be used for an upcoming party. Next pour the vegetable oil in a wok and once temperature is medium hot gently place the stuffed wrappers in the oil and deep fry till they turn faint brown in colour and then place them inside the oven at medium setting to keep them warm.

For the dip, combine all the ingredients in a pan on medium-low heat for five minutes till sugar and salt dissolves and mixture thickens and turns syrupy. Empty in a bowl and for a spicy punch add one teaspoon of chopped jalapeno peppers.


Smokey Turkey Finger Sandwiches

These healthy petite sandwiches are easily prepared and pack a flavourful punch when served chilled.

Preparation Time: 10 minutes

Total Time: 20 minutes
Ingredients

1 cup of smoked turkey, cubed

One teaspoon mixed herbs

3 tablespoons of green onion

Juice of half a lemon

3 ounces of cream cheese, room temperature

4 ounces softened butter

8 ounces of grated smoked Fontina cheese

8 ounces of grated regular sharp Cheddar cheese

1 teaspoon cayenne pepper

¾ cup of mayonnaise

9 ounces of oven-dried tomatoes, diced

12 slices of White/ Whole wheat bread

One-quarter teaspoon of salt


Procedure

Add the turkey, butter, mixed herbs, green onion and lemon into a processor and combine well. Now remove the mix into a medium-sized bowl and blend in the duo cheese varieties, tomatoes, cayenne pepper and salt.


Evenly layer out the smoky cheese blend over the de-crusted breads and then cut every sandwich to form 3 finger sandwiches using a sharp knife and serve. You could even make triple layered turkey finger sandwiches that can be served along with chips.

Feta Cheese and Salmon Bruschetta

Ingredients

2 tablespoons of olive oil

Grinded anise seed (2)

One quarter cup of diced chives

Juice of 1 lemon plus some shreds of the rind

Three-quarter lb. of smoked salmon slivers

Salt and pepper to taste

Half a cup of feta cheese

1.5 lb. of baguette (cut into thin slices and toasting them)

Chopped cilantro (for garnishing)



Procedure

Properly mix together the above six constituents and refrigerate for around two hours. Now generously layer the toasted baguettes with feta and ladle on a heaped teaspoon of the fish mix. Optionally, cilantro can be used for garnishing the toasts.
