Ingredients
For Dough:

3 tbsp extra virgin olive oil

Lukewarm water

3 cups flour

Salt, to taste

For filling:

1 onion (chopped)

5 oz. asiago cheese (chopped)

1 garlic clove

1 lb. and 9 oz. fresh spinach leaves

3 tbsp extra virgin oil

Pinch of nutmeg

Salt, to taste


Method

Take a bowl, mix flour, the oil, salt and water. Knead the dough well until it becomes soft and smooth. Cover the dough with a towel and let it remain in a bowl for about thirty minutes. Take a nonstick pan, take oil and heat it, thereafter add the chopped onion and sauté them until they become transparent.

In the intervening time, boil the spinach leaves in water (add a pinch of salt) for a few minutes. Now drain the water from them, exclude the extra liquid. Now chop the spinach and add them to the fried onions in the pan, then add a dash of nutmeg and salt according to taste. Cook well.



Take the kneaded dough and put it on a towel (kitchen). Roll it until it becomes thin and give it a shape of a rectangle. Now take a bowl and put the spinach, add the asiago cheese to it.

Spread this filling on the dough in an even way. First fold the shorter sides of the rectangular dough, then with the help of a towel roll the spinach filled dough. Now apply some olive oil on the roll.

Pre heat the oven to 190 degree centigrade. Now put the roll in a baking plate and cook it for about thirty to forty minutes in the oven. Your yummy spinach roll is ready to relish. Cut the roll in slices and serve it hot!


Tip:

You can serve these delectable spinach rolls as an appetizer or as a main dish complemented with a light salad or sauce. These rolls can be refrigerated up to two days. Take them out and reheat them at 190 degree centigrade for 10 minutes.
