How To Prepare Healthy And Luscious Cashew Chicken

Ingredients

Chicken 1 kg

Onions 7

Ginger (small pieces) 2

Cumin Seeds ½ teaspoon

Garlic Cloves 25

Chili Powder 2 teaspoon

Turmeric Powder ¼ teaspoon

Coconut Oil ½ cup

Mustard Seeds 1 teaspoon

Cashew Nuts 20

Tomatoes 2

Lemon 1

Salt (to taste)

Coriander Leaves 3 twigs


Method

As the first stage of your cooking, you can prepare the ingredients finely for the dish. In order to that, first, you need to chop three onions and two tomatoes properly and reserve. Then, slice rest of the onions into thin pieces and keep aside. Now, you can wash the chicken with clean water and chop it into small pieces (approximately two inch cubes)

After reserving the chopped chicken pieces, you have to prepare two different pastes. For the first one, you can keep the cashew nuts in water for some time and grind it well. When a fine paste is prepared, keep it in a small bowl. After that, add the ginger pieces, chopped onions, garlic, and cumin seeds to the grinder and grind them well. As you prepare a good paste, keep it in a separate bowl.

After that, you can take a frying pan and heat it adding coconut oil to it. When the oil gets hotter, add mustard seeds to it. As they are crackled in the oil, add the sliced onions to the pan and start stirring. You need to fry the onions until they get a light brown color. Then, you can add the ginger-onion paste to the pan and stir well. Once, you mixed these ingredients well, add the chopped tomatoes to them and stir once. After some time, add chili powder and blend it well with mixture.

Now, you can add the chicken pieces to the pan and stir well. Then, add turmeric powder along with required salt. Add little water and stir it again to blend all the ingredients finely. At the same time, cut the lemon and squeeze it into a bowl. Then, add the cashew paste to this lemon juice and blend it well. Now, you can add this mixture to the pan and stir well.



Then, cover the pan and keep the flame at a medium level. You have to boil the mixture until the chicken is fully cooked and turned soft. In between, you can open the pan and stir well adding some water if required.

Once the mixture is well cooked, turn off the flame and transfer the dish to a serving plate. Chop the coriander leaves finely and sprinkle over the dish. Your cashew chicken is ready to be served. You can serve it with steamed rice before it loses the warmth.
