Lettuce Wraps Recipe

Lettuce wraps have an appetizing, low-calorie filling that taste amazing along with a tangy dipping sauce.

Ingredients For Dip

Rice wine vinegar, mild (180 milliliters)

Red pepper powder (one-eighth teaspoon)

Freshly squeezed juice of lemon (a tablespoonful)

Sesame seed, roasted (three tablespoonfuls)

Dark toasted sesame seed oil (a tablespoonful)


Ingredients For Sauce I

Sweet rice wine (60 milliliters)

Dry rice wine (60 milliliters)

Low-sodium soya sauce (60 milliliters)


Ingredients For Sauce II

Onion, finely chopped (1 medium)

Satay sauce (120 milliliters)

Chinese Barbecue sauce (a tablespoonful)

Light soya sauce (a tablespoonful)

Sesame seed oil (a tablespoonful)


Ingredients For Wrap

Beef loin, diced thinly (450 grams)

Baby carrot, finely diced (2)

Beans, sprouted (90 grams)

Corn starch (a tablespoonful)

Courgette, finely sliced (1)

Spring onions, finely chopped (a fistful)

Capsicum, green and red, diced into longish strands (half each)

Lettuce leaves (20)

Celery cabbage, finely diced (one medium head)

Red kraut, finely diced (2 tablespoons)

Salt and freshly cracked black peppercorns, as per taste

Vegetable oil (two tablespoons)


Procedure

The dip can be prepared in advance by combining all the above mentioned ingredients in a small glass bowl and setting aside. The beef loin slices are then placed in a medium-sized container and seasoned with some salt as well as freshly cracked black peppercorns. The pieces are tossed with corn starch for evenly coating them.



The oil is then poured into a deep non-stick saucepan that has been placed over high flame. The beef pieces are added into the heated vessel and sautéed till they loose their rawness and develop a brownish colour. They are now sieved out into another container.

In the same vessel the diced green and red capsicum, courgette, baby carrots and onions are sautéed for around two minutes. The duo types of cabbage as well as the sprouted beans are added to the vessel. The veggies are sautéed for around two minutes till the extent that they become tender yet retain some crispness. The sautéed beef slices are returned back to the pan.

In a small-sized bowl the ingredients for the stir fry sauce, namely, sweet rice wine, dry rice wine and low-sodium soya sauce are blended together. It is then added to the pan and tossed for coating the constituents in it. Finally, the stir-fried mix is seasoned appropriately with salt and freshly cracked peppercorns.

The contents of the pan are then transferred onto a colander placed over a container for draining out excess liquids. The lettuce leaves are arranged on serving dishes and the stir-fried mixture divided equally amongst them. Garnish with diced spring onions and enjoy along with the dip.


Another stir fry sauce can be prepared by heating up sesame seed oil in a large-sized pan placed over moderate-high flame. The onions are then cooked till they turn translucent after which we add the beef pieces dusted with corn starch, pepper and salt.

Continue sautéing the beef slices till they cook through. The Chinese Barbecue sauce, satay sauce and light soya sauce are added to the vessel and heated through. The veggies are tossed in and cooked till they retain some crispness. Sprinkle some diced spring onions over the filling and then serve on lettuce leaves that can be folded over it and rolled up. Serve along with the dip.
