Satisfying Sweet Rice Recipe

Nothing gives one as much satiety, texture and flavour as rice and when it is offered as a tempting dessert, then not many can resist its temptation. Any hot-blooded Asian will vouch for this fact. Elucidated herewith are two different ways of preparing sweet rice that can be eaten as a quick snack or served as dessert.

Sweet Rice Recipe (In Rice cooker)

Flavourful sweet rice is quite appealing to the eyes and palate with its delicate combination of rice, condiments and dry fruits cooked to perfection.

Preparation Time: 30 minutes

Cooking Time: 10 minutes

Total Time: 40 minutes

Serves: 4


Powdered Jaggery/Brown Sugar or White Sugar (100 grams)

Long slender grain rice (190 grams)

Water (500 milliliters)

Clarified Butter (1 ¾ tablespoons)

Assorted dry fruits, slivered (raisin, cashew, almond, pistachios) (2 tablespoons)

Zest of orange (half teaspoon) (optional)

A pinch of Saffron

Ground cardamom (one-fourth teaspoon)


The long-grain rice is soaked in cold water for 30 minutes. This helps in softening them so that easier penetration of liquid and even cooking occurs which results in pleasantly fluffy and separate grains.

The water is heated up till boiling point and then the powdered jaggery is mixed in until complete dissolution is noticed. Add the clarified butter to a skillet placed over moderate-high flame till it melts. The dry fruits are tipped into the vessel and then cooked till raisins plump up and the rest of the dry fruits develop a light brown colour. Now empty them into a rice cooker along with the pre-soaked rice grains after draining the water.

At this stage use a pairing knife or a veggie peeler for gently zesting an orange. Stop once you hit the white portion as it can be rather bitter to taste. Add the orange zest as well as the saffron into the cooker which proffer an amazing flavour to the dish. The cooled jaggery and water mixture is then poured in via a strainer to remove out any likely impurities which might have been present in the powdered jaggery.

Lightly combine all the ingredients with a spoon prior to cooking them for a single whistle and then let the pressure subside after which the contents can be removed. Transfer the contents into a serving platter and garnish with some ground cardamom as well as finely slivered almonds, pistachios and cashews.

Sweet Rice Recipe (On Stovetop)

The use of any sort of long grain rice is advisable as it is traditionally used in the recipe and also lends a great flavour to the dish.

Cooking Time: 30 minutes

Total Time: 1 hour

Serves: 4


Long grain rice (190 grams)

Water (420 milliliters)

Almond Milk or Regular Milk (60 milliliters)

Granulated sugar (100 grams)

Clarified butter (trio tablespoons)

Finely sliced almonds, pistachios (a tablespoonful each)

Raisins (a tablespoonful)

Saffron strands (one-fourth teaspoon)

Cardamom seeds, finely crushed (6)

Salt (a pinch)

Cloves (four)

Cinnamon stick (half-inch piece)


The long-grain rice ought to be washed and soaked in cold water for thirty minutes. Pour 420 milliliters of water into a medium pan placed over high flame and add the pre-soaked, drained rice as well as the cinnamon and a pinch of salt. Once the rice begins boiling then the heat is reduced to moderate-low and covered with a lid.

Slowly combine with a fork to properly incorporate all the ingredients and allow gentle simmering on low flame for 2-3 minutes with the lid on. Empty in a serving dish along with a generous sprinkling of diced pistachios and serve immediately.
