Steps To Make Savoury Quiche

This French cuisine is an all time favorite amongst all age groups. Easy to prepare and easy to serve, quiches will win smiles of all. This is an all time meal, can be served as evening starter or for snacking in between hours, or can be served as whole meals too.

This savory quiche is a great way to use leftovers in a tasty way, also to load your kid with nutritional value of vegetables, if one is unwilling to consume otherwise. Let us unfold the magic of savory quiche.




Ingredients
For stuffing:

Butter 2 tbsp Finely chopped

onions ¼ cup Finely chopped

green chillies 1 tbsp (optional) Finely chopped

boiled broccoli 1 cup

Salt, pepper 1 tbsp

heaped maida

1 cup milk Sugar

For short crust:

Maida 100 gm

Butter 50 gm

Grated cheese 2 tbsp

Roasted oregano ½ tsp

Salt ¼ tsp

Ajwain ½ tsp

Baking powder

Ice chilled water 2-3 tbsp

Tomato sauce 2 tbsp

Grated cheese ½ cup

Chilli flakes Oregano


Method

Prepare white sauce at first. In heated pan put 1 tbsp butter, fry 2 tbsp maida till it starts changing colour and add a cup of milk. Add sugar to taste and stir till thick. See to it that no lumps are formed. Keep aside the white sauce. Now heat a table spoon of butter in a pan, and fry shredded onion and chillies till soft. Add broccoli to it along with salt and pepper to taste.

At the end add white sauce to it and let it come to a boil. Your stuffing for the quiche is ready! For short crust, in a bowl, mix maida, butter, grated cheese, roasted oregano, ajwain, salt and baking powder. Keep this mix in freeze for 15-20 minutes. Once the mixture becomes cold, take it out from the refrigerator and mix it gently between palms to make it look like bread crumbs



Don’t be either too hard or too soft on the mixture. In the above mentioned mixture pour ice cold water in little quantities as required and make soft dough out of it, such that you can roll them. Use as little water as possible. Dust the dough with a little loose refined flour and roll the crust ½ inch thick. Stick this crust on a greased and dusted pie dish properly.

Trim the edges, and make few holes with a toothpick or fork. Now put a butter paper on this crust dough and put some chickpeas on top of the butter paper such that the dough crust doesn’t swell up. Now bake this in a preheated oven of 240 C. Once the crust dough has baked, take it out from the oven and remove the butter paper and chickpeas from it; and add the stuffing.

Now pour some tomato sauce, grated cheese and spray some chilli flakes and oregano on it. Again bake the dish at 240 C for 15-20 min till the quiche turns golden brown and the cheese starts melting from above. Now take this out from the pie dish and cut the quiche in 4 parts with a pizza cutter; serve hot!


Tip

For the stuffing, instead of using broccoli, you can use shredded spinach, cauliflower or a mix of your favorite vegetables.
