Tortellini And White Bean Soup Recipe

Pasta and white beans combined with Parmesan cheese, red bell pepper, and spinach gives you the heartwarming tortellini and white bean soup.  Apart from being delicious and quick to make, this recipe is also healthy and satisfying. Serve the soup with herb bread for a classic wholesome meal.

Tortellini is ring or navel shaped pasta made of durum wheat. It should not be mistaken for tortelloni pasta that is similar to tortellini in shape but is stuffed with vegetable and cheese. Although this recipe calls for tortellini, you can replace it with your favorite pasta variety to make the soup more appetizing.




Tortellini And White Bean Soup

Ingredients Required

1 cup tortellini pasta

2 cups white beans

5 cups spinach leaves

6 cups chicken/vegetable broth

1 red bell pepper

1 onion

3 cloves garlic

2 cups tomatoes

1 tsp Italian seasoning

½ cup Parmesan cheese.

1 tbsp olive oil

Salt and Pepper


Method

1. Rinse and clean the vegetables thoroughly. Cut the bell pepper into small cubes and chop the onion finely. Likewise, chop the tomatoes and spinach. Mince the garlic cloves and grate the Parmesan cheese. Cover and place the ingredients aside for later use. Clean, soak and cook the beans in a regular pot or pressure cooker. If you are using canned beans, then follow the instructions given on the label.

2. To cook the pasta, place a large sauce pan containing 1½ liter of water on a medium flame.  Add a teaspoon of salt and bring the water to a boil. Slowly add the pasta to the boiling water, stirring the pot intermittently. It is not advisable to add oil as it will make the pasta slippery. Cook the pasta for 8-10 minutes or until the pasta is firm but not soft and sticky. Drain the cooked pasta into a colander or sieve placed in your kitchen sink.  Transfer the drained pasta to a bowl containing cold water and drain the water again. The pasta is now cooked to al dente.

3. Place a large pot or pan over the stove on a medium flame. Add olive oil to the pot and wait until it becomes hot. Add minced garlic, chopped onion and stir well until the onion turns soft and transparent for about 2-3 minutes.




4. Stir in the Italian seasoning followed by bell pepper, spinach and tomatoes. Saute the contents well and toss in the white beans.  If you do not have the Italian Seasoning, add herbs like thyme, basil, paprika, etc. to your soup. Add the chicken/ vegetable stock, salt and pepper into the pot. You can also add other vegetables like broccoli, zucchini and artichokes to improve the nutritional value of the soup.

5. Bring the contents of the pot to a boil, close, reduce the heat to low and simmer for 3-4 minutes. Add the cooked pasta and continue simmering the soup for another 2 minutes. Remove the soup from the stove and garnish it with grated Parmesan cheese. You can also use cheddar cheese for garnishing the soup. Ladle the soup into bowls and serve hot with a slice of herb or garlic bread.
