Two Mouth Watering Cauliflower Recipes

Cauliflower Roast

Ingredients:

•    1 cauliflower

•    1 large onion

•    5-6 cloves of garlic

•    ½ inch ginger

•    1 large and ripe tomato

•    2-3 cloves

•    3-4 cardamom

•    1 inch cinnamon

•    1/2 teaspoon nutmeg powder

•    ½ teaspoon mace powder

•    Turmeric

•    Yogurt

•    Red chili powder

•    Bay leaf.

•    Salt

Preparation:

Remove all the outer leaves of the cauliflower.Do not cut in to pieces. Keep it whole. Then soak it in a tumbler of hot boiled water to drive out any insects or pests that still remain inside.



After that strain the water and rub little amount of salt and turmeric. Then make a fine paste of onion, garlic and ginger. Crush cardamom, cinnamon and cloves and mix it with nutmeg powder and mace powder. Chop onion very finely. Beat yogurt very well.

Process:

Heat oil in a pan. Place the cauliflower in such a way that the flower portion should be on hot oil. Fry flowers very well. Remove them from pan and keep aside.

Again add some oil in the pan and heat it. Fry a bay leaf and then add onion, ginger and garlic paste.

Add tomato and stir-fry all the ingredients.When they are almost fried, add yogurt and keep stirring. Add pinch of turmeric, red chili powder and salt.

Add sugar to counter the sourness of yogurt and tomato. After that place the fried cauliflower on the spices in such a way that the flowers touch the spices.

Add little water to make the cauliflower tender. When the preparation is ready, sprinkle powdered spice over it and keeping the lid on, let it remain there for a few minutes; after wards you can remove the dish from the oven.



Cauliflower Curry

Ingredients:


•    1 cauliflower

•    1 large potato

•    1 cup chopped tomato

•    1 tablespoon garlic paste

•    1 tea spoon garlic paste

•    Butter oil

•    Cumin seed

•    Coriander leaves

•    Turmeric

•    Salt



Preparation:

Cut cauliflower in to medium size. Peel potato and cut them into medium size. After that rub salt and turmeric powder on cauliflower and potato. Chop coriander leaves.



Process:


Heat butter oil and fry tomato. Then add garlic and onion paste and fry them. Add cauliflower and potato and stir well so that the spices mix well with vegetables. Then add salt to taste. Again stir.

Add water and cook till the preparation turns into thick gravy and the vegetables are well tender. While serving garnish it with chopped coriander leaves.
